Our youngest brother, Koichi, in Japan will hand pick the freshest catch for your meal at the Japanese fish market on Saturday morning, approximately 20 hours before it reaches your plate! This menu will be created a few hours before the meal, based on what we find that day and can only be tasted in the VIP room. This is a rare opportunity to get in soon--the seats fill quickly.

Wild Copper River Salmon Season Opens in 2 weeks!
At the moment before salmon returns to the river to spawn from the wild Alaskan sea, is the prime time to catch this tasty treat. This rich red meat is full of flavor, yet very light. Wild Copper River Salmon is available only 3-5 weeks out of the year. Sushi Den has teamed up directly with the fisherman in Cordova, Alaska for the last 3 years to bring you the most delicious Wild Copper River Salmon.
This is the e-mail that has just arrived from our fisherman:
Hi Yasu,
I've attached a photo of spring (about 2 wks. ago) in Cordova, and a photo of Britt holding a CR king and our son, Jem, holding a CR sockeye from 2006. "Copper River salmon is here!" Not quite yet. The first of the Copper River salmon will arrive in Denver around the 16th of May. The Copper River flows 300 miles through the state of Alaska, emptying into the Gulf of Alaska, near Cordova. The wild salmon originating in these pristine waters are challenged by its length and its strong, chill rapids. Copper River salmon are one of Alaska's finest wild salmon, and are world famous for their firm flesh and rich flavor. Managed for long term sustainability, Copper River salmon are caught wild and hand-selected to ensure premium quality. I fish out of the town of Cordova with my family. We live on a houseboat during the spring and summer months, then back to Colorado for the winter. I've fished this area for 16 years and hope to do it for many more. The Copper River is managed by Alaska Fish and Game for sustainability first. The Copper River fish stocks have slowly increased from a 1 million fish return to a 1.7 million fish return in the time that I've been in this fishery. Cordova had one of its coldest winters this year. They had record floods in the fall and record snowfall this winter. Hopefully the spring sun and growing daylight hours will keep the snow pack melting to get the Copper River free of all the ice. No prediction is made about the number of kings returning but the 10 year average harvest for the 1997-2006 period is 44,277 kings. Fish and Game announce the date and hours of the first salmon opener in early May. Fishermen are kept in suspense along with the fresh markets and foodies until then. Only once the nets have hit the water will any of us know whether the kings are on-time or late! Be ready to pounce, the first kings to town will be gone fast!
