Think Spring!

The Spring is finally here even though we had a few rainy days. It is so wonderful to see the sun has been out and it has already been warming up.

At our Den Farm in Brighton, what we have done in the last 4 weeks is to plant different types of organic seeds in the green house. They are now sprouting beautifully. We will be re-planting these little ones into the fertile ground soon. Then, in about 2 month's time, we will start to harvest these organic veggies and work on the different menus to serve at our 3 restaurants. We will keep you informed with the updates!

Another thing we have been engaged in is to continue to raise funding for the Japanese Red Cross Society through our donation boxes at each restaurant. On top of what we have already raised and donated to the Red Cross a few weeks ago, we also raised another $3172.70. On behalf of Japanese people, we sincerely thank you very much for your big hearts and generosity!

Source of Seafood

Due to the earthquake and current events in Japan, we have been receiving questions about the origin of our fish. Please rest assured they are all safe.

First of all, our seafood is fished approximately 1000 miles south of epicenter in Sea of Japan. It is entirely a different part of Japan. The water current does not meet. Secondly, we import approximately 20% of our fish through our youngest brother stationed in southern Japan. The most important thing you should know is before leaving Japan, all of our seafood is first inspected by the Ministry of Health, the Japanese FDA, then when it arrives in San Francisco, USDA inspects our shipment upon arrival at the airport on a daily basis. 5280 Magazine recently wrote about our efforts to insure safety in bringing fish from Japan

Another thing we are also paying close attention to is the status of this situation via the experts. Should anything change to compromise the quality of the fish we import, we will not purchase or serve substandard products.

Fun Sushi Making Class

This class is given by Yasu Kizaki, one of the sushi chefs/founders of Sushi Den, Izakaya Den and OTOTO Food and Wine Bar. After the class, we will have a dinner together with the sushi you prepared in class. Your meal consists of 20 pieces of sushi, and complimentary miso soup and green tea!

During this class you will learn the step by step process of how to make sushi at home. You can also get home party ideas from this class!
